by Dave MichelApril 14, 2015This recipe was given to me from a Holden Village and/or Community of St. Martin friend (I don't remember who). Makes 12 cupcakes.
Mix until creamy:
- 8 oz. cream cheese
- 1 egg
- 1/3 C sugar
- pinch salt
Stir in 1 1/2 C semisweet chocolate chips, and set aside
Sift into medium bowl:
Stir in:
- 1 C sugar
- 1/4 C unsweetened cocoa
- 1 t soda
- 1/2 t salt
Add and mix:
- 1 C water
- 1 T vinegar
- 1/3 C vegetable oil
- 1 t vanilla extract
Divide cocoa batter evenly into a greased 12 muffin tin, put a spoonful of cream cheese mixture in the center of each future cupcake.
Bake at 350° for 30-35 minutes.
